Chef & Owner: Gerald Poelzl
Chef Gerald Poelzl has had his own businesses and has worked in restaurants, 4 star hotels, cafes and clubs for over 20 years, including Lothar’s on Pymble Hill (a one Chef’s Hat restaurant), Sheraton on the Park, Sydney and Carlton Hotel, Darwin. Having completed his apprenticeship under a Swiss chef and then working with German, French and Australian chef’s influenced Gerald’s cooking style. Using modern Australian cuisine incorporated with traditional European techniques and flavours creates hearty dishes cooked with love.

In September 2016 we welcome Peter Hammett as chef to work along side Gerald to create innovative menus and dishes. Peter has a passion for cooking and is embarking on a new career following his enjoyment in the kitchen.
Maitr D’: Nicole Poelzl
Bistro One46 is run by Gerald with his wife Nicole. They are a team who love food and people. They enjoy providing luscious, appetizing meals with friendly, inviting service for a wonderful dining experience. Nicole was a primary teacher, but has always enjoyed working in hospitality, working part-time whilst at university. This was how Nicole & Gerald met and she will tell you that Gerald wooed her with his crème brulee to win her heart so many years ago.
Front of House
As well as Nicole, you will be served by other wait staff when you dine at Bistro One46. Staff Caroline, Bethany, Jemima and Austin will look after you with friendly, professional and welcoming service.
December 2016/January 2017 will see a few changes in our staffing with some moving out of the area and off to study and travel. We thank all our staff and wish them well with their next step. We welcome Bethany and Austin to our team and look forward to you coming in to meet them.
